The pan-fried chicory is a spring side dish to be prepared in just 20 minutes. Easy to clean, they cook in a couple of minutes before being stir-fried and then brought to the table. You can enrich them with capers, olives or a piece of anchovy, and they are perfect to accompany many dishes. The recipe is very simple, but it was worth trying: P
How to make puntarelle in a pan
Clean the chicory starting to divide the head into four parts.
Detach the various ribs and remove the final core.
Then wash them with plenty of cold water.
Prepare a pot with salted water and as soon as it is boiling, cook the chicory for 2 minutes.
Drain the vegetables and brown a clove of garlic in a pan with the oil and the chilli.
Transfer the chicory into it and sauté for about 5 minutes.
Add some salt and bring your puntarella in a pan to the table.
