Fish couscous is a recipe that I prepared some time ago, one Sunday I wanted a nice fish-based first course and in order not to make the classic seafood risotto, I opted to prepare cous cous with all the fish I like best, swordfish, shrimp and seafood. The fish couscous is a typical Sicilian dish where it is prepared in the Trapani or Messina style, I tried a little to follow the two recipes but then I had to adapt to what I had at home and I must say that the result is 'was more than satisfactory;) As I had anticipated in the newsletter, by now I have a package of cous cous to consume and I will propose it again in some other variant also because it is very convenient to cook and I often solve dinner for myself and my husband combining it with different foods each time. Now I greet you and start my day, a big kiss to all my friends and to those who are getting closer as they go;)

Method

How to make fish couscous

Put the clams in cold water and salt for 30 minutes to allow any impurities to drain

Finely chop the onion and sauté it in a large pan with a drizzle of oil. (if you have it, add a carrot, a stick of celery)
Add the swordfish cut into chunks and sauté for a few minutes.


Deglaze with the white wine and add the cherry tomatoes cut in half.
Cook for about ten minutes then add the peeled and headless prawns and a glass of fish broth.

In a separate pan, open the clams and mussels by cooking them over high heat until the valves are open

Shell the seafood, keeping some aside to garnish the dish and add them to the fish sauce together with their cooking liquid (which you will take care to filter through a colander). Salt, pepper and add the chives. Turn off the flame and cover with a lid.

Pour a glass of couscous into a bowl, add 250 ml of broth and mix until the liquid is completely absorbed, add a knob of butter and shell all the beans with a fork

Pour the couscous into a bowl and pour all the dressing over the edges and the fish in the center

decorate the plate with the seafood kept aside and serve
