  1. Puree raspberries. Add to a bowl and stir in cream and sugar till dissolved.
  2. Place mixture in an ice cube tray or in star shaped moulds. Place a toothpick in each mould and let freeze overnight, till solid.

If the toothpicks do not remain upright, wait a little and insert them once the mixture has solidified slightly.

I’ve been enjoying my tub of 3-ingredient low carb ice cream over these last couple of weeks. Maybe a little too much, because it finally ran out the other day. And of course, with the super hot weather, I got a craving for more ice cream. You know, the kind you have to satisfy immediately. Like, right this second. The last thing I felt like doing was making more ice cream and waiting forever for it to freeze! Instead, I created this 3-ingredient raspberry ice cream recipe on the spot!

This raspberry ice cream is basically instant. You need three ingredients and maaaaybe two minutes, if not less. All you have to do is pulse some frozen raspberries, heavy cream, and sweetener to taste in a blender. Ta-da! Instant raspberry ice cream!

There’s a lot of flexibility with this sugar-free ice cream recipe. Sweeten it to your liking, using whatever sweetener you have! I recommend a powdered or liquid sweetener for best results. I’ve done it with both powdered erythritol and stevia.

You can easily make it paleo and dairy-free if you prefer. Just replace the heavy cream with coconut cream instead! Both ways are delicious.

I also want to experiment with making this fruit ice cream using other berries. Frozen blackberries, strawberries, or blueberries all sound really good! Any frozen fruit you have should work, but berries are among the lowest in sugar, which I like.

Can you churn ice cream without an ice cream maker

The simple answer is yes, you can make ice cream without an ice cream maker. It won’t be as smooth or creamy as that made in a machine, but still good.

To churn by hand, place the ice cream custard into the freezer once already chilled from the fridge. Use a whisk or spatula or even a fork to give it a really good mix every half an hour, over the space of two hours, minimum.

For raspberry ripple ice cream, you’ll need to add the ripple on the last churn, removing half the ice cream to ripple through half the sauce, then return it and add the rest of the sauce.

Recipe: Dairy-Free Raspberry Coconut Ice Cream

Ice cream made with frozen fruit and coconut cream is every bit as rich and delicious as dairy-based ice cream. The raspberries in this recipe are a fantastic source of vitamin C and fiber. You don’t need an ice cream machine, but for best results, use a high-speed blender that comes with a tamper so the berries puree thoroughly and the mixture is quick to turn smooth and creamy.

Ingredients

2 (10-ounce) packages frozen raspberries
½ cup coconut cream
1 teaspoon alcohol-free, gluten-free pure vanilla extract
½ teaspoon ground cardamom
2 tablespoons dark maple syrup (optional, for Pegan Diet)
2 tablespoons bee pollen
2 tablespoons shredded unsweetened coconut
2 tablespoons cacao nibs
10 chopped honey-roasted pistachios (optional)

Directions

  1. Combine raspberries, coconut cream, vanilla, cardamom and maple syrup, if using, in a blender.
  2. Blend on high speed, using the tamper (if available) to push the berries down toward the blade, until mixture is smooth, thick and creamy, about 1 minute.
  3. Using a spatula, scoop the ice cream into four bowls.
  4. Sprinkle each portion with 1½ teaspoons each of the bee pollen, coconut, and cacao nibs, optional pistachios (if using) and serve. (This ice cream doesn’t keep well, so serve all of it immediately.)

Raspberry Ice Cream Ingredients

Raspberries. I always use fresh raspberries if I can get them but you can also use frozen raspberries. Thaw before adding them into the ice cream maker so they incorporate into the ice cream easier.

Milk/Cream. I use a combination of whole milk, half and half and whipping cream. Half and Half is not available in all countries and it is basically a combination of half milk and half whipping cream so if you can’t get half and half, just use more whipping cream and whole milk.

Favorite Ice Cream Maker:

I use a counter top ice cream maker. It has a double insulated freezer bowl and needs to be frozen at least 24 hours before making your ice cream. I just keep mine in the freezer all the time so it is ready to go at a moments notice! This style of ice cream maker only makes 1 1/2 qts of ice cream.

This style of ice cream maker has three main parts: an external drum, a canister, and a churn. The ingredients go in the canister which then goes into the machine’s drum and there is a churn that goes into the middle of the canister. You layer ice and rock salt into the canister up to the top and turn it on and let it work it’s magic. This ice cream maker usually makes about 4 qts so if you are feeding a crowd this is the better way to go.
