Dough ingredients:

  • 220 g of melted coconut oil
  • 80 g sugar, 85 m milk, a knife tip baking soda
  • Half a teaspoon of vinegar, half a sachet of vanilla sugar
  • 2 tablespoons hot coffee, 85 g wheat flour
  • 20 gr cocoa, half a sachet of baking powder, a pinch of salt

Ingredients for the filling:

  • 20 cherries, rum (to taste)
  • 2 tablespoons sugar, half a tablespoon starch
  • 1 tablespoon honey

Ingredients for decoration:

  • 50 ml sweet cream for whipped cream
  • 1 sachet of whipping cream
  • Half a tablespoon of powdered sugar
  • Black chocolate

Method of preparation:

Put the cherries in a jar and pour over them a mixture of water and rum. We put the jar in the fridge. This procedure must be done the night before.

We prepare the dough. Add the vinegar to the cold milk. We set it aside. In a bowl, mix the coconut oil with the two types of sugar, using a whisk. Then add the milk and coffee. Mix well so that all the ingredients combine.

Sift flour with baking powder, cocoa and baking soda into this mixture. Add a pinch of salt. Mix carefully so as not to form lumps.

We put muffin papers in a special shape. Using a spoon, distribute the dough in the pan. Put the tray in the preheated oven at 180 degrees for about 12 minutes. We check the dough with a toothpick.

Remove the tray from the oven and let the muffins cool for about 10 minutes, then remove them from the pan, place them on a plate and let them cool completely.Meanwhile, prepare the filling. Put 8-10 cherries aside. We cut the remaining cherries into smaller pieces and put them in a pan. Pour the liquid in which they were marinated, add sugar, honey, starch and rum (to taste). Let the mixture of ingredients boil.Then turn off the stove and stir continuously until the mixture begins to solidify. Let it cool.Carefully remove the muffins from the special papers. In the same way we will fill the other muffins. Put the muffins in the fridge for a few minutes.We prepare whipped cream. Using the mixer, beat the sweet cream briefly, then add the powdered sugar and hardener and continue to mix until you get a firm cream.

Finely chop the dark chocolate or grate it. Using a pastry pos, decorate the muffins with whipped cream, place a cherry in the middle and sprinkle dark chocolate on top. Good appetite and increase cooking!

Cherry muffins

1. Mix the margarine at room temperature with the powdered sugar until frothy then add an egg. Drain the essence in the milk then pour into the composition and mix until lightly frothed.

Meanwhile, season the icing by boiling the sugar with the puree and the cherries, then give the pan to cool a little. Pour the icing warm over the muffins that I took out of the molds and let them cool well, then decorate with the cherries off. Allow to cool slightly to harden the glaze.

Cherry muffins. Yum! When I got home, I went to my dad's in the garden. I went back there a little in time, I remembered my childhood and what it means to be a child again. So I climbed nicely with my sister in the cherry and stuffed ourselves with lots and lots of cherries. We also made earrings out of them. And I thought of a recipe for cherry muffins.

Because I like more muffins than cupcakes, I used cherries picked and transported to Bucharest for a recipe only good to try at home. The recipe is a basic one for sweet muffins and you can use any kind of fruit, not just cherries. But they are a good starting point and if it's still their season, why not take advantage?

Cherry muffin recipe


(for 12 muffins, standard tray)

225 gr. flour
2 teaspoons baking powder (about 8 grams)
150 gr. extra brown sugar
75 gr. melted butter
1/2 teaspoon vanilla extract
1 egg, lightly beaten
200 ml. milk
150 gr. pitted cherries

Preparation time: approx. 45 minutes

First we prepare the muffin tray and put 12 paper shapes in it.

Turn on the oven and heat it to 180 degrees or stage 4.

If you don't find the cherries sweet enough, you can add a little sugar over them and leave them on a plate until you use them.

We take a large bowl and add the dry ingredients that we pass through a sieve: flour, baking powder and sugar. Mix well and make a hole in the middle.

In another bowl, mix the wet ingredients: melted butter, vanilla extract, beaten egg and milk. Pour the liquid thus obtained into the first bowl and mix gently.

Add half the amount of cherries in the dough and a teaspoon of jam if desired. Stir gently.

We fill the shapes in the tray with a spoon. On top add the rest of the cherries.

It will look great when I'm ready.

Bake the muffins for 25 minutes until they become brown on the surface and are firm to the touch. Or do the test with the toothpick & # 8211 insert in the middle and if it comes out dry, I'm ready!

Let the muffins cool for 5 minutes in the form, then take them out of the pan and cool them on a grill. That's if you still resist, although hot they fall harder on the stomach & # 8230

If you have any left over, you can keep them in a tightly closed container for up to 3 days.

  3. Add the lemon peel, unquenched baking powder and a pinch of salt.
  4. Stir in the flour, stirring with a wooden spoon.
  5. Separately, powder the fruit with 2 tablespoons of powdered sugar.
  6. Stir in the fruit, stirring lightly in the dough.
  7. Let the dough rest at room temperature for at least 1 hour.
  8. Preheat the oven to 190 degrees (medium to high heat).
  9. Grease the muffin tins (disposable paper and silicone do not need) with a little oil and powder them with flour.
  10. Add 2 tablespoons of coca fruit.
  11. Put the muffins in the oven in a pan for 20 minutes.
  12. Remove the muffins, allow to cool, and remove the molds.
  13. Powder the muffins with powdered sugar.
  14. Muffins with cherries, cherries or blueberries are served hot or cold.

  • 1 packet - baking powder of 10 gr.

For the cream:

  • 500 gr. - sweet cream
  • 10 gr. - cream hardener
  • 4 tablespoons powdered sugar
  • 1 teaspoon - vanilla essence

Method of preparation:

  1. First of all put the butter and sugar in a bowl, mix until you get a creamy paste. Then gradually incorporate one egg at a time.
  2. Pour the cream and vanilla essence on top, mix a little and then add the flour and baking powder. Mix everything together until you have no lumps.
  3. Arrange the special sheets of paper in the muffin baking tray. First put 3-4 pitted cherries in the molds, then fill each form with 2/3 of the dough, at the end decorate with two cherries on top, also pitted without seeds.
  4. Bake the muffins in the preheated oven at 180 degrees C for about 25 minutes.
  5. Remove the muffins from the oven, allow them to cool completely.
  6. Meanwhile, pour the sweet cream, powdered sugar, vanilla essence and whipping cream into a bowl. Mix until the cream becomes fluffy and firm, take care not to mix it more and cut.
  7. Put the cream in a bag with a toothpick and decorate each muffin, at the end decorate with a cherry. Good appetite!
