It is an excellent cake, it perfectly combines the sweet taste of the fluffy top with the sour one of the cherries. It goes for dessert or coffee in the morning.
The cake can be made with any seasonal fruit (plums, apricots, peaches, strawberries ...); compote fruits are also good.
- 5 eggs
- 5 tablespoons sugar
- 5 tablespoons flour
- 1 teaspoon baking powder
- 2 tablespoons oil
- 1 sachet of powdered sugar
- 1 teaspoon free of rum
- 1 pinch of salt
- 300 gr pitted cherries
Preparation time: less than 60 minutes
RECIPE PREPARATION Cherry cake:
Remove the seeds from the cherries and let them drain on paper towels.
Separate the egg whites from the yolks. Whisk the egg whites and then gradually add the sugar. We mix the yolks with oil, salt, vanilla sugar and rum essence. Pour the yolks over the egg whites and mix. Add the flour in which I put the baking powder and mix slowly from top to bottom, just enough to incorporate the flour.
Add the cherries to the dough and mix lightly. Pour the composition into the tray in which I put baking paper and bake on medium heat for 20 minutes.
After it is completely cooled, we can powder it with sugar.
